Ingredients

  • 4 pieces Sea bass fillets
  • 500 grams Baby spinach
  • 50 grams Raisins
  • 40 grams Pine nuts
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 pieces Fresh garlic cloves, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Lemon juice
  • 2 tablespoons Water

Directions

Step 1

Pat the sea bass fillets dry with a paper towel and season both sides with salt and black pepper.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Place the sea bass fillets skin-side down into the skillet and cook for about 4 minutes, until the skin is crispy. Flip the fillets and cook for an additional 3-4 minutes, or until the fish is cooked through and flakes easily with a fork. Remove the fillets and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Toss in the pine nuts and toast them lightly for 1-2 minutes until golden, stirring frequently to avoid burning.

Add the minced garlic and raisins to the skillet and sauté for 1 minute until fragrant.
