  • 4 large russet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 0.5 cup milk
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Heat olive oil in a large skillet over medium heat. Add the chopped onion, garlic, carrots, and celery, and sauté until softened, about 5 minutes.
