Ingredients

  • 2.5 cups All-purpose flour
  • 0.5 tablespoons Granulated sugar
  • 0.5 teaspoons Salt
  • 1 cup Unsalted butter, cold and cubed
  • 6 tablespoons Ice water
  • 6 medium Ripe pears, peeled, cored, and sliced
  • 0.75 cups Brown sugar
  • 1 teaspoons Ground cinnamon
  • 0.25 teaspoons Ground nutmeg
  • 2 tablespoons Cornstarch
  • 1 teaspoons Vanilla extract
  • 1 large Egg (for egg wash)
  • 1 tablespoons Milk (for egg wash)

Directions

Step 1

In a large mixing bowl, combine the flour, sugar, and salt for the crust.

Step 2

Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs.

Step 3

Gradually add the ice water, one tablespoon at a time, mixing with a fork until the dough just comes together.

Step 4

Divide the dough in half, shape into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 5

Preheat your oven to 375°F (190°C).

Step 6

In a large bowl, combine the sliced pears, brown sugar, cinnamon, nutmeg, cornstarch, and vanilla extract. Toss until the pears are evenly coated.

Step 7

On a lightly floured surface, roll out one of the chilled dough discs into a 12-inch circle. Transfer it to a 9-inch pie dish, gently pressing it into the bottom and sides.

Step 8

Pour the pear filling into the pie crust, spreading it out evenly.

Step 9

Roll out the second dough disc into another 12-inch circle. Place it over the pie filling, and trim any excess dough, leaving about a 1-inch overhang.

Step 10

Seal the edges of the pie by crimping them with a fork or your fingers.

Step 11

Cut a few small slits in the top crust to allow steam to escape.

Step 12

In a small bowl, beat the egg and milk together to create the egg wash. Brush it evenly over the top crust.

Step 13

Place the pie on a baking sheet to catch any drips, and bake in the preheated oven for 50 minutes, or until the crust is golden brown and the filling is bubbly.

Step 14

Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before serving to allow the filling to set.
