  • 4 lbs beef brisket
  • 2 tbsp olive oil
  • 2 tsp kosher salt

  • 2 cups beef broth
  • 1 yellow onion, sliced
  • 4 garlic cloves, minced
  • 2 tbsp brown sugar
  • 3 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 4 sprigs fresh thyme (optional)

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Trim any excess fat from the brisket, leaving about 1/4 inch for flavor. Pat the brisket dry with paper towels.

Step 3

In a small bowl, combine kosher salt, black pepper, paprika, garlic powder, and onion powder. Rub the mixture evenly over the entire brisket.

Step 4

Heat olive oil in a large oven-safe Dutch oven or heavy pot over medium-high heat. Sear the brisket on both sides until deeply browned, about 4-5 minutes per side. Remove the brisket and set it aside.

In the same pot, add the sliced onion and minced garlic. Sauté until softened and fragrant, about 3-4 minutes.
