Ingredients

  • 6 cups Mixed baby greens (spinach, arugula, and kale)
  • 2 medium Purple carrots
  • 1 cup Blackberries (fresh or frozen)
  • 1 cup Black-eyed peas (cooked and rinsed if canned)
  • 0.5 cup Pecans (toasted)
  • 0.25 cup Feta cheese (crumbled)
  • 0.25 cup Olive oil
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 clove Garlic (minced)

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash the purple carrots thoroughly, then slice them into thin rounds or sticks. Toss with a drizzle of olive oil and a pinch of salt and pepper.

Step 3

Arrange the carrot slices on a baking sheet in a single layer and roast in the oven for 10 minutes, or until tender and slightly caramelized. Remove from the oven and let cool.

Step 4

While the carrots roast, make the blackberry balsamic vinaigrette. In a small bowl or blender, combine olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, salt, and pepper. Add 5-6 blackberries and blend until smooth. Taste and adjust seasoning if needed.

Step 5

In a large salad bowl, combine the mixed baby greens, roasted purple carrots, black-eyed peas, toasted pecans, and crumbled feta cheese.

Step 6

Drizzle the blackberry balsamic vinaigrette over the salad and toss gently to coat the ingredients evenly.

Step 7

Garnish with a few extra fresh blackberries on top for an extra pop of color and flavor.

Step 8

Serve immediately and enjoy your spooky Screeching Black Cat Salad!
