Ingredients

  • 14 ounces Firm tofu
  • 1 tablespoon Olive oil
  • 0.5 cup Onion
  • 0.5 cup Red bell pepper
  • 0.5 teaspoon Turmeric powder
  • 2 tablespoons Nutritional yeast
  • 0.5 teaspoon Garlic powder
  • 1 cup Fresh spinach
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Drain and press the tofu to remove excess moisture. Use a tofu press or wrap the tofu in a clean kitchen towel and place a heavy object on top for about 10-15 minutes.

Once pressed, crumble the tofu into bite-sized pieces with your hands or use a fork.

Step 3

Heat olive oil in a large skillet over medium heat.

Step 4

Add the chopped onion and red bell pepper to the skillet. Sauté for about 5 minutes or until the vegetables are soft.

Stir in the crumbled tofu and cook for another 5 minutes, stirring occasionally.
