Ingredients

  • 4 large Eggs
  • 2 cups Fresh spinach leaves
  • 2 tablespoons Milk
  • 1 cup Grated cheese (cheddar or mozzarella)
  • 1 tablespoon Butter
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Crack the eggs into a medium-sized bowl. Add the milk, salt, and black pepper, then whisk until the mixture is smooth and well combined.

Step 2

Thoroughly rinse the fresh spinach leaves and pat them dry using a kitchen towel.

Step 3

Heat a medium non-stick skillet over medium heat and add the butter. Swirl the pan until the butter is melted and coats the bottom.

Step 4

Add the spinach to the skillet and sauté for 1-2 minutes, until it wilts and reduces in size. Remove it from the skillet and set aside.

Step 5

Lower the heat to medium-low and pour the egg mixture into the skillet. Let it cook undisturbed for about 1 minute until the edges start to set.

Step 6

Gently scramble the eggs by using a spatula to push the cooked edges toward the center, allowing the uncooked egg mixture to flow outward. Continue this process for 2-3 minutes, ensuring the eggs remain soft and fluffy.

Step 7

Sprinkle the grated cheese evenly over one half of the eggs, then add the sautéed spinach over the cheese.

Step 8

Fold the other half of the eggs over the filling to create an omelet shape. Let it cook for another 1-2 minutes to let the cheese melt completely.

Step 9

Carefully slide the omelet onto a plate, cut in half if serving two people, and enjoy immediately.
