Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 4 large Eggs
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 2 tablespoons Butter
  • 2 tablespoons Raisins
  • 2 tablespoons Powdered sugar
  • 0 Applesauce or fruit jam (optional, for serving)

Directions

Step 1

In a medium mixing bowl, whisk together the all-purpose flour, milk, granulated sugar, vanilla extract, and salt until smooth.

Step 2

Separate the eggs. Place the egg whites in a clean mixing bowl and the yolks into the batter. Stir the yolks into the batter until combined.

Step 3

Using a hand mixer or whisk, beat the egg whites until they form stiff peaks. Gently fold the beaten egg whites into the batter with a spatula, being careful not to deflate them.

Step 4

Heat 1 tablespoon of butter in a large nonstick skillet over medium heat. Pour the batter into the skillet, spreading it out evenly.

Step 5

Sprinkle the raisins over the batter, ensuring they are evenly distributed.

Step 6

Cook for 3–4 minutes until the bottom is golden and set. Then use a spatula to divide the pancake into quarters and flip each section to cook the other side for another 2–3 minutes.

Step 7

Once the pancake is fully cooked through, use a spatula to tear it into bite-sized pieces directly in the skillet.

Step 8

Add the remaining tablespoon of butter and toss the pieces gently to caramelize slightly, cooking for another 2–3 minutes.

Step 9

Remove from heat and transfer to serving plates. Dust generously with powdered sugar.

Step 10

Serve warm with applesauce or fruit jam on the side, if desired.
