Ingredients

  • 4 large Eggs
  • 3 stalks Scallions (Green Onions)
  • 1 cup Mushrooms (Button or Cremini)
  • 2 tablespoons Milk
  • 1 tablespoon Unsalted Butter
  • 1 teaspoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Directions

Step 1

Wash and pat dry the scallions and mushrooms. Thinly slice the scallions, separating the white and green parts. Slice the mushrooms into thin pieces.

In a medium bowl, crack the eggs and add the milk, salt, and black pepper. Whisk until fully combined and slightly frothy.

Heat a non-stick skillet over medium heat. Add the olive oil and butter, allowing the butter to melt and coat the pan evenly.
