Ingredients

  • 3 cups Frozen hash browns
  • 6 large Eggs
  • 0.25 cups Milk
  • 0.5 cups Cheddar cheese, shredded
  • 2 tablespoons Butter
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Chives, chopped (optional)
  • 1 as needed Non-stick spray

Directions

Step 1

Preheat your oven to 400°F (200°C) and generously spray a 12-cup muffin tin with non-stick spray.

Step 2

Divide the frozen hash browns evenly among the 12 muffin cups, pressing them down and up the sides to create nest shapes.

Step 3

Bake the hash brown nests in the preheated oven for 15-20 minutes or until golden brown and crispy.

Step 4

While the nests are baking, crack the eggs into a mixing bowl, add milk, salt, and pepper, and whisk until well combined.

Heat a non-stick skillet over medium-low heat and melt 1 tablespoon of butter.
