Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 cups mild or medium salsa (jarred or homemade)
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese (optional)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 4 pieces lime wedges (optional, for serving)

Directions

Step 1

Heat the olive oil in a large skillet over medium-high heat.

Step 2

Season the chicken breasts on both sides with cumin, garlic powder, smoked paprika, salt, and black pepper.

Step 3

Place the chicken in the hot skillet and sear for 2-3 minutes per side, until golden brown. Remove the chicken and set aside (it won't be fully cooked yet).

Step 4

In the same skillet, pour in the salsa and stir to combine with the cooking juices.

Step 5

Bring the salsa to a simmer, then return the chicken breasts to the skillet.

Step 6

Reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 7

Optional: Sprinkle shredded cheddar cheese over the chicken during the last 2 minutes of cooking and cover to let it melt.

Step 8

Garnish with fresh cilantro and serve with lime wedges on the side, if desired.

Step 9

Serve hot over rice, with tortillas, or alongside steamed vegetables.
