Ingredients

  • 1 cup (cooked or canned, rinsed and drained) Black beans
  • 1 cup Shredded cheddar cheese
  • 4 large Flour tortillas
  • 0.5 cup (diced) Red bell pepper
  • 2 tablespoons (chopped) Fresh cilantro
  • 2 stalks (thinly sliced) Green onions
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Chili powder
  • 2 teaspoons Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup (for serving) Salsa
  • 0.5 cup (optional, for serving) Sour cream

Directions

Step 1

In a medium mixing bowl, combine the black beans, red bell pepper, cilantro, green onions, ground cumin, chili powder, salt, and black pepper. Stir well to evenly mix the ingredients.

Step 2

Heat a large nonstick skillet over medium heat and lightly brush with 1 teaspoon of olive oil.

Place a tortilla in the skillet and sprinkle 1/4 cup of shredded cheddar cheese evenly over half of the tortilla.

Spoon 1/4 of the black bean mixture onto the cheese, spreading it evenly. Fold the tortilla in half to create a half-moon shape.
