Ingredients

  • 900 grams Granulated sugar
  • 120 grams Unsalted butter
  • 400 ml Sweetened condensed milk
  • 150 ml Whole milk
  • 2 tablespoons Scottish whisky
  • 1 teaspoon Vanilla extract
  • 1 pinch Pinch of salt

Directions

Step 1

Grease and line an 8x8-inch (20x20 cm) square baking tin with parchment paper. Set it aside.

Step 2

In a large, heavy-bottomed saucepan, combine the granulated sugar, unsalted butter, sweetened condensed milk, and whole milk.

Step 3

Place the saucepan over low heat and stir constantly with a wooden spoon until the sugar has completely dissolved and the butter has melted. This step may take around 10 minutes.

Step 4

Increase the heat to medium and bring the mixture to a gentle boil, stirring frequently to prevent sticking or burning.

Step 5

Once the mixture starts to boil, reduce the heat to a simmer and cook for about 20–25 minutes. Stir occasionally and ensure the mixture doesn’t stick to the bottom of the pan.

Step 6

The mixture will thicken and turn a golden caramel color. To test if it’s ready, drop a small amount into cold water. If it forms a soft ball that holds its shape, it is at the right consistency.

Remove the saucepan from the heat and stir in the whisky, vanilla extract, and a pinch of salt. Be careful, as the mixture will be very hot, and the whisky may cause some bubbling.

Using an electric hand mixer or wooden spoon, beat the mixture vigorously for 5–10 minutes until it starts to thicken and lose its glossy texture.

Quickly pour the mixture into the prepared baking tin and spread it out evenly with a spatula if necessary.

Allow the tablet to cool and set completely at room temperature for at least 2 hours, then transfer it to the fridge for an additional hour to harden.

Step 11

Once fully set, remove the tablet from the baking tin and cut it into small squares or rectangles. Store in an airtight container at room temperature for up to two weeks.
