Ingredients

  • 900 grams granulated sugar
  • 120 grams unsalted butter
  • 250 milliliters whole milk
  • 397 grams sweetened condensed milk
  • 1 teaspoon vanilla extract

Directions

Step 1

Prepare a baking tin (approximately 20x20 cm) by lining it with parchment paper. Set it aside.

Step 2

In a large, heavy-bottomed saucepan, add the granulated sugar, unsalted butter, and whole milk.

Step 3

Heat the mixture over low heat, stirring frequently, until the sugar has completely dissolved and the butter has melted. Avoid boiling at this stage.

Step 4

Once the sugar has dissolved, add the sweetened condensed milk to the saucepan and stir well to combine.

Step 5

Raise the heat to medium and bring the mixture to a gentle boil. Stir constantly to prevent the mixture from sticking to the bottom or burning.

Continue to simmer the mixture, stirring regularly, until it reaches a temperature of 118°C (245°F) on a candy thermometer. If you don't have a thermometer, you know it’s ready when the mixture thickens, darkens slightly, and starts to pull away from the sides of the pan.

Remove the saucepan from the heat and stir in the vanilla extract.

Let the mixture cool slightly for 2-3 minutes, then beat it vigorously with a wooden spoon until it thickens and becomes creamy. This helps to give the tablet its signature crumbly texture.
