Ingredients

  • 500 g ground beef (minced meat)
  • 1 large onion
  • 2 medium carrot
  • 4 medium potatoes
  • 500 ml beef stock
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp vegetable oil
  • 1 piece bay leaf
  • 1 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Peel and finely chop the onion. Peel the carrots and dice them into small cubes. Peel the potatoes and cut them into chunks.

Step 2

In a large pot or Dutch oven, heat the vegetable oil over medium heat.

Step 3

Add the chopped onions and sauté for 3-4 minutes until softened and translucent.

Step 4

Add the ground beef to the pot and cook, stirring frequently, until browned and no longer pink, about 5-7 minutes.

Step 5

Stir in the diced carrots and cook for an additional 3 minutes.

Step 6

Add the tomato paste, salt, black pepper, and bay leaf. Stir to combine and cook for 1-2 minutes to toast the tomato paste slightly.

Step 7

Pour in the beef stock and bring the mixture to a boil.

Step 8

Add the potato chunks to the pot, ensuring they are mostly submerged in the liquid.

Step 9

Reduce the heat to low, cover the pot with a lid, and let the dish simmer for 30-35 minutes. Stir occasionally to prevent sticking.

Step 10

Check if the potatoes are tender by piercing them with a fork. If they easily break apart, the dish is ready.

Step 11

Remove and discard the bay leaf. Taste and adjust seasoning with more salt and pepper, if needed.

Step 12

Serve hot, garnished with freshly chopped parsley, if desired.
