Ingredients

  • 200 grams Sharp cheddar cheese
  • 30 grams Unsalted butter
  • 15 grams All-purpose flour
  • 120 milliliters Whole milk
  • 1 teaspoon English mustard
  • 60 milliliters Ale or stout beer (optional)
  • 1 teaspoon Worcestershire sauce
  • 2 large Egg yolks
  • 0.5 teaspoon Black pepper
  • 4 slices Thick slices of bread (white or wholegrain)

Directions

Step 1

Grate the cheddar cheese and set it aside.

Step 2

In a medium saucepan, melt the butter over low heat. Once melted, add the flour and whisk continuously to create a smooth paste (roux). Cook for 1-2 minutes to remove the raw flour taste, but don’t let it brown.

Gradually pour in the milk, a little at a time, whisking constantly to prevent lumps. If using ale or stout, add it at this stage as well.

Step 4

Cook the mixture over medium heat, whisking until it thickens into a creamy sauce (about 3-4 minutes).

Reduce the heat to low and stir in the grated cheddar cheese, English mustard, Worcestershire sauce, and black pepper. Continue stirring until the cheese is completely melted and the mixture is smooth.

Remove the saucepan from the heat and allow the mixture to cool slightly. Once cooled, stir in the egg yolks to create a rich, glossy sauce.

Toast the bread slices until golden brown. Place the toasted slices on a baking sheet.
