Pour the whole milk into a large saucepan and heat it gently over medium heat, ensuring it does not boil. Stir occasionally to prevent scorching.
Once the milk is hot (around 80°C or 175°F), remove it from the heat and stir in the vinegar or lemon juice. Allow the mixture to sit undisturbed for 10 minutes. The milk will curdle, and you'll notice the whey (a yellowish liquid) separating from the curds.
Line a fine-mesh sieve with cheesecloth and place it over a large bowl. Carefully pour the curdled milk into the sieve, allowing the whey to drain out completely. Discard the whey or save it for another use.
Transfer the curds to a separate bowl and set them aside to cool slightly.
Preheat your oven to 180°C (350°F). Grease a small baking dish or ramekins with butter.
In a medium-sized bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, ensuring they are fully incorporated after each addition. Add a pinch of salt.
Mix the drained curds into the butter, sugar, and egg mixture, stirring until smooth and well combined.
Pour the curd mixture into the prepared baking dish or divide it evenly among the ramekins.
Bake in the preheated oven for 20-25 minutes, or until the top is set and golden brown.
Remove from the oven and allow to cool slightly. Optionally, sprinkle with nutmeg or cinnamon for added flavor.
Serve warm or at room temperature. Enjoy your Scottish Curd as a dessert or a light snack!
