  • 50 grams Butter
  • 100 grams Granulated sugar
  • 2 large Eggs
  • 1 pinch Salt
  • 0.5 teaspoon Nutmeg or cinnamon (optional, for garnish)

Directions

Step 1

Pour the whole milk into a large saucepan and heat it gently over medium heat, ensuring it does not boil. Stir occasionally to prevent scorching.

Step 2

Once the milk is hot (around 80°C or 175°F), remove it from the heat and stir in the vinegar or lemon juice. Allow the mixture to sit undisturbed for 10 minutes. The milk will curdle, and you'll notice the whey (a yellowish liquid) separating from the curds.

Line a fine-mesh sieve with cheesecloth and place it over a large bowl. Carefully pour the curdled milk into the sieve, allowing the whey to drain out completely. Discard the whey or save it for another use.

Transfer the curds to a separate bowl and set them aside to cool slightly.

Preheat your oven to 180°C (350°F). Grease a small baking dish or ramekins with butter.
