Ingredients

  • 200 grams Dark chocolate (70% cocoa or higher)
  • 50 grams Unsalted butter
  • 4 large Eggs, separated
  • 75 grams Caster sugar
  • 150 ml Heavy cream
  • 1 orange Orange zest
  • 2 tablespoons Fresh orange juice
  • 2 tablespoons Scottish whiskey
  • 1 pinch Sea salt
  • 0 optional Whipped cream (for garnish)
  • 0 optional Chocolate shavings (for garnish)
  • 0 optional Orange slices or zest (for garnish)

Directions

Step 1

Finely chop the dark chocolate and place it in a large heatproof bowl.

Step 2

Melt the chocolate and butter together over a double boiler or in the microwave in 20-second increments, stirring frequently until smooth. Remove from heat and let cool slightly.

Step 3

In a medium bowl, whisk the egg yolks and half of the caster sugar (37.5 grams) until pale and creamy.

Step 4

Add the orange zest, fresh orange juice, and Scottish whiskey to the melted chocolate mixture, stirring to combine. Then fold the egg yolk mixture into the chocolate until fully incorporated.

Step 5

In a separate clean bowl, beat the egg whites with a pinch of sea salt until soft peaks form. Gradually add the remaining caster sugar (37.5 grams) and continue to beat until stiff peaks form.

Step 6

Gently fold the egg whites into the chocolate mixture in three additions, being careful not to deflate the mousse.

Step 7

Whip the heavy cream in another bowl until it holds soft peaks, then fold it gently into the mousse mixture until smooth and well combined.

Step 8

Spoon the mousse into serving glasses or bowls, smoothing the tops with a spatula if desired. Cover and refrigerate for at least 2-3 hours, or until set.
