Ingredients

  • 250 grams all-purpose flour
  • 100 grams rolled oats
  • 50 grams granulated sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoons baking soda
  • 0.25 teaspoons salt
  • 100 grams unsalted butter, cold
  • 180 milliliters buttermilk, cold
  • 1 teaspoons vanilla extract
  • 2 tablespoons optional: coarse sugar for topping

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour, rolled oats, granulated sugar, baking powder, baking soda, and salt. Mix well to evenly distribute the dry ingredients.

Step 3

Cut the cold unsalted butter into small cubes. Add the butter to the dry ingredients and use a pastry cutter or your fingertips to work it into the mixture until it resembles coarse crumbs.

Step 4

In a small bowl or measuring jug, whisk together the cold buttermilk and vanilla extract.

Step 5

Make a well in the center of the dry mixture and pour in the buttermilk mixture. Gently fold the ingredients together with a spatula until a soft dough forms. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface. Gather it into a ball and gently press it into a circle about 1 inch (2.5 cm) thick.

Step 7

Use a sharp knife or bench scraper to cut the circle into 8 equal wedges, like a pie. Place the scones on the prepared baking sheet, spacing them slightly apart.

Step 8

If desired, sprinkle the tops of the scones with coarse sugar for a golden, sweet crust.

Step 9

Bake in the preheated oven for 16-18 minutes, or until the scones are golden brown and cooked through.

Step 10

Remove the scones from the oven and allow them to cool slightly before serving warm or at room temperature. These scones pair wonderfully with jam, clotted cream, or butter.
