Ingredients

  • 4 pieces (6-8 oz each) beef sirloin steaks
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 small (finely minced) shallots
  • 1 cup beef stock
  • 0.25 cup Scotch whisky
  • 0.5 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 tablespoon (chopped) fresh parsley

Directions

Step 1

Season the beef sirloin steaks evenly on both sides with salt and black pepper. Allow the steaks to sit at room temperature for 10 minutes.

Step 2

In a large skillet or frying pan, heat the olive oil over medium-high heat. Once the oil is shimmering, add the steaks to the pan. Cook for 3-4 minutes per side for medium-rare, or adjust cooking time to your preferred doneness. Remove the steaks from the pan, cover with aluminum foil, and set aside to rest.

Step 3

Reduce the heat to medium and add the butter to the pan. Once melted, add the minced shallots. Sauté the shallots for 2-3 minutes until soft and translucent, stirring frequently.

Step 4

Carefully pour the Scotch whisky into the pan. Allow it to bubble and reduce slightly for about 1-2 minutes, scraping up any browned bits from the bottom of the pan with a wooden spoon.

Step 5

Add the beef stock to the pan and bring it to a simmer. Cook for 4-5 minutes, allowing it to reduce by half.

Step 6

Stir in the heavy cream and Dijon mustard. Simmer the sauce gently for an additional 2-3 minutes, stirring occasionally, until thickened and velvety.

Step 7

Return the steaks to the pan, along with any juices that collected while resting. Spoon the sauce over the steaks and cook for 1-2 minutes to warm through.

Step 8

Remove the steaks from the pan and plate them. Spoon the whisky sauce generously over the top. Garnish with the chopped fresh parsley and serve immediately alongside mashed potatoes, roasted vegetables, or your favorite sides.
