Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons salt
  • 0.5 cup unsalted butter
  • 1 cup granulated sugar
  • 0.5 cup packed brown sugar
  • 2 large eggs
  • 1.5 cups applesauce (unsweetened)
  • 0.75 cup raisins (optional)
  • 0.5 cup chopped nuts (walnuts or pecans, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare a 9-inch round or square cake pan by greasing it and lining the bottom with parchment paper.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

In a large bowl, cream the butter, granulated sugar, and brown sugar together until light and fluffy using an electric mixer or a wooden spoon.

Step 4

Add the eggs to the creamed mixture one at a time, beating well after each addition.

Step 5

Mix in the applesauce until well combined.

Step 6

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 7

If using raisins and/or nuts, fold them in gently at this stage.

Step 8

Pour the batter into the prepared cake pan and spread it evenly with a spatula.

Step 9

Bake in the preheated oven for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.

Step 10

Remove the cake from the oven and allow it to cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely before serving.

Step 11

Slice and enjoy as is, or serve with a dollop of whipped cream or a dusting of powdered sugar.
