Ingredients

  • 150 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 25 grams caster sugar
  • 1 large egg
  • 150 milliliters milk
  • 25 grams unsalted butter, melted
  • 2 tablespoons vegetable oil

Directions

Step 1

In a large mixing bowl, sift together the flour, baking powder, and salt. Stir in the caster sugar.

Step 2

In a separate bowl, beat the egg and then mix in the milk.

Step 3

Make a well in the center of the dry ingredients and pour in the egg-milk mixture. Gradually whisk from the center outwards, incorporating the flour until you have a smooth batter.

Step 4

Stir in the melted butter until fully combined.

Step 5

Heat a non-stick frying pan or griddle over medium heat and add a little vegetable oil, spreading evenly with a brush or paper towel.

Step 6

Once the pan is hot, pour 2 tablespoons of batter into the pan for each pancake, spacing them apart. You can usually cook 3-4 at a time, depending on your pan size.

Step 7

Cook the pancakes for about 1-2 minutes on each side, or until bubbles form on the surface and they are golden brown underneath. Flip them carefully with a spatula and cook the other side.

Step 8

Transfer the cooked pancakes to a warm plate and cover with a clean tea towel to keep them warm while you cook the remaining batter.

Step 9

Serve the Scotch pancakes warm with butter, jam, or your favorite syrup. Enjoy!
