Ingredients

  • 2 pieces (200g each) Scotch fillet steak
  • 1 teaspoon Salt
  • 0.5 teaspoons Freshly ground black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves (smashed) Garlic cloves
  • 4 sprigs Fresh thyme or rosemary

Directions

Step 1

Remove the Scotch fillet steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature.

Step 2

Pat the steaks dry with paper towels to remove excess moisture. Season both sides generously with salt and freshly ground black pepper.

Step 3

Heat a large heavy-bottomed skillet (preferably cast iron) over medium-high heat until very hot, about 2-3 minutes.
