Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 0.5 cup All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 0.25 cup Fresh lemon juice
  • 2 tablespoons Capers (optional)
  • 2 tablespoons Fresh parsley, chopped
  • 4 slices Lemon slices (for garnish)

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch using a meat mallet or rolling pin.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Dredge each chicken breast lightly in the flour mixture, shaking off any excess.

Step 3

In a large skillet, heat the butter and olive oil over medium-high heat. Once the butter has melted and is sizzling, add the chicken breasts to the pan in a single layer. Cook for 3-4 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

Step 4

Reduce the heat to medium. Add the minced garlic to the same skillet and cook for 30 seconds, stirring constantly, until fragrant.

Step 5

Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet. If using capers, add them at this time.

Step 6

Allow the sauce to simmer for 3-4 minutes, letting it reduce slightly. Taste and adjust seasoning with additional salt or pepper if needed.

Step 7

Return the cooked chicken breasts to the skillet, spooning the sauce over the top. Let the chicken warm in the sauce for 2-3 minutes.

Step 8

Remove from heat and sprinkle with fresh parsley. Garnish each chicken breast with a lemon slice before serving.

Step 9

Serve the Pollo Al Limone with your choice of sides, such as roasted vegetables, mashed potatoes, or a simple arugula salad. Enjoy!
