Ingredients

  • 6 pieces Pork neck steaks
  • 3 medium Onions
  • 4 pieces Garlic cloves
  • 120 ml Vegetable oil
  • 2 tablespoons Apple cider vinegar
  • 2 teaspoons Paprika (sweet or smoked)
  • 1 teaspoon Mustard (Dijon or German-style)
  • 1 teaspoon Caraway seeds
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper

Directions

Step 1

Slice the onions into thin rings and chop the garlic into small pieces or press it with a garlic press.

Step 2

In a large bowl, combine the vegetable oil, apple cider vinegar, paprika, mustard, caraway seeds, salt, and black pepper. Whisk well to form a marinade.

Step 3

Add the onions and garlic to the marinade, stirring to coat them evenly.

Step 4

Place the pork neck steaks in the bowl with the marinade, ensuring each steak is fully coated. Layer the steaks with onions from the marinade if needed.

Step 5

Cover the bowl with plastic wrap or a lid and refrigerate for at least 4 hours, preferably overnight, to let the flavors develop.

Step 6

Preheat your grill to medium-high heat. If you have a traditional 'Schwenker' grill, suspend the grill plate over an open fire and allow it to heat up.

Step 7

Remove the steaks from the marinade, allowing any excess to drip off, and grill them for 4-5 minutes on each side or until they reach an internal temperature of 70°C (165°F).

Step 8

While grilling, you can occasionally brush the steaks with leftover marinade for added flavor, but ensure it is cooked off before serving.

Step 9

Serve the Schwenk hot with a side of traditional German potato salad, sauerkraut, or simply fresh bread and a cold beer.
