Ingredients

  • 3 medium russet potatoes
  • 6 slices bacon
  • 6 eggs
  • 1 cup cheddar cheese, shredded
  • 1 medium bell pepper, diced
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions, sliced
  • 1 splash hot sauce (optional)

Directions

Step 1

Peel and dice the russet potatoes into small, even-sized cubes (about half an inch).

Step 2

In a large skillet, cook the bacon over medium heat until crispy, about 7-10 minutes. Remove the bacon from the skillet, let it cool, and crumble it into small pieces. Reserve 1 tablespoon of the bacon grease in the skillet and discard the rest.

Step 3

In the same skillet with the reserved bacon grease, add the diced potatoes. Cook over medium heat, stirring occasionally, until they are golden brown and cooked through, about 10-12 minutes.

Step 4

Add the butter to the skillet, along with the diced bell pepper and onion. Cook for 5 minutes, stirring occasionally, until they soften. Add the minced garlic and cook for an additional minute.

Step 5

In a medium-sized bowl, whisk the eggs with the salt and black pepper. Push the vegetables and potatoes to one side of the skillet and pour the eggs into the empty side.

Step 6

Allow the eggs to cook for 1-2 minutes before gently scrambling them, then mix everything in the skillet together.

Step 7

Sprinkle the shredded cheddar cheese over the mixture and cover the skillet with a lid. Let it sit for 1-2 minutes, or until the cheese is melted.

Step 8

Remove the skillet from heat and sprinkle the crumbled bacon and sliced green onions over the top. Add a splash of hot sauce if desired.

Step 9

Serve the Schultzie's Mess warm directly from the skillet or scoop onto plates. Enjoy!
