Ingredients

  • 6 medium Yellow onions
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 2 tablespoons All-purpose flour
  • 8 cups Beef broth
  • 0.5 cup Dry white wine
  • 1 whole Bay leaf
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 loaf French baguette
  • 2 cups Swiss cheese (Gruyère or Emmental)

Directions

Step 1

Peel and thinly slice the onions into evenly-sized half-moon slices.

Step 2

In a large heavy-bottomed pot, melt the butter and olive oil over medium heat.

Step 3

Add the sliced onions to the pot and stir to coat with the butter and oil.

Step 4

Cook the onions, stirring occasionally, for about 25–30 minutes, or until they are deeply caramelized and golden brown.

Step 5

Sprinkle the flour over the caramelized onions and stir well to combine. Cook for 2 minutes to remove the raw flour taste.

Step 6

Slowly add the beef broth, 1 cup at a time, stirring constantly to avoid lumps.

Step 7

Stir in the dry white wine, bay leaf, thyme, salt, and black pepper. Bring the mixture to a simmer.

Step 8

Reduce the heat to low, cover, and simmer for 20 minutes, stirring occasionally to prevent sticking.

Step 9

While the soup simmers, preheat your oven to 375°F (190°C). Slice the baguette into 1-inch thick rounds and place them on a baking sheet.

Step 10

Toast the baguette slices in the oven for 10 minutes, flipping halfway through, until they are crisp and lightly golden.

Step 11

Preheat your oven’s broiler. Ladle the hot soup into oven-safe bowls. Place a toasted baguette slice on top of each bowl and sprinkle generously with grated Swiss cheese.

Step 12

Place the bowls under the broiler for 2–3 minutes, or until the cheese is melted and bubbly. Remove carefully with oven mitts.

Step 13

Serve the soup immediately, garnished with a sprig of thyme if desired. Enjoy the rich, savory flavors of this comforting dish!
