Directions

Wash and thoroughly dry the cilantro and parsley to remove any dirt or debris.

Step 2

Remove the stems from the cilantro and parsley, and roughly chop the leaves.

Step 3

Wear gloves if sensitive to heat; slice the green hot peppers lengthwise, remove the seeds if you prefer a milder schug, then chop the peppers.

Peel the garlic cloves.

Step 5

In a food processor, add the cilantro, parsley, chopped peppers, and garlic cloves.

Step 6

Add the cumin, coriander, salt, and cardamom to the food processor.

Step 7

Pour in the lemon juice.

Step 8

Pulse the ingredients until they are finely chopped, but avoid turning them into a paste. The texture should be slightly chunky.

Step 9

With the processor running on low speed, slowly drizzle in the olive oil until the mixture is well combined and emulsified.

Step 10

Taste and adjust seasoning as needed, adding more salt, lemon juice, or olive oil if desired.

Step 11

Transfer the schug to a jar or airtight container. It can be stored in the refrigerator for up to 2 weeks.
