Ingredients

  • 2 medium-sized Raw green mangoes
  • 1 tablespoon Salt
  • 1 cup Granulated sugar
  • 1 teaspoon Red chili powder
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Roasted cumin powder
  • 1 teaspoon Mustard seeds
  • 3 tablespoons White vinegar
  • 2 tablespoons Neutral oil (such as sunflower or canola oil)
  • 0.25 cup Water

Directions

Step 1

Wash the green mangoes thoroughly and pat them dry. Peel the skin and slice them into thin strips or bite-sized cubes. Discard the pit.

Step 2

Place the mango pieces in a mixing bowl and sprinkle the salt and turmeric powder over them. Mix well and let it sit for 15 minutes to release moisture.

Step 3

After 15 minutes, drain any excess liquid from the mango pieces and set them aside.

Step 4

In a small saucepan, heat the oil over medium heat. Add the mustard seeds, and let them splutter for about 30 seconds.

Step 5

Lower the heat, and add the red chili powder, roasted cumin powder, and half of the sugar. Stir continuously for 1-2 minutes, ensuring the spices don’t burn.

Step 6

Add the mango pieces to the saucepan and mix well to coat them with the spiced oil.

Step 7

Pour in the white vinegar, water, and the remaining sugar. Stir well and let the mixture simmer over low heat for 7-10 minutes, or until the sugar dissolves and the pickle thickens slightly.

Step 8

Taste and adjust the sweetness, salt, or spice according to preference.

Step 9

Remove the pickle from heat and allow it to cool completely. Transfer it to a clean, airtight glass jar and refrigerate.

Step 10

The School Girl Pickle is ready to enjoy after 24 hours of marination, allowing the flavors to meld. Serve it with bread, crackers, rice, or just enjoy it by itself as a tangy snack!
