Ingredients

  • 300 g stale white bread or rolls
  • 500 ml milk
  • 3 large eggs
  • 100 g sugar
  • 1 tsp vanilla extract
  • 3 medium apples (e.g., Granny Smith or Braeburn)
  • 50 g raisins
  • 1 tsp cinnamon
  • 20 g butter
  • 0 powdered sugar (optional, for dusting)

Directions

Step 1

Preheat your oven to 180°C (350°F). Grease a medium-sized baking dish with butter.

Step 2

Cut the stale bread or rolls into thin slices. If the bread is very dry, you can lightly toast it to make it easier to work with later.

Step 3

In a mixing bowl, whisk together the milk, eggs, sugar, and vanilla extract to create the custard mixture.

Step 4

Peel, core, and slice the apples into thin wedges. In a small bowl, mix the apple slices with cinnamon to coat them evenly.

Step 5

Start layering the Scheiterhaufen in the greased baking dish. Begin with a layer of bread slices, then add a layer of apple slices and sprinkle a handful of raisins on top. Repeat the layers until all the ingredients are used, ending with a layer of bread on top.

Step 6

Pour the custard mixture evenly over the layers, ensuring the bread is well-soaked. Let the dish sit for 5 minutes to allow the custard to fully absorb into the bread.

Step 7

Dot the top layer with small pieces of butter to help it brown and crisp during baking.

Step 8

Place the dish in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the custard is set.

Step 9

Remove the Scheiterhaufen from the oven and let it cool slightly before serving. Optionally, dust the top with powdered sugar for extra sweetness.

Step 10

Serve warm as is or with a dollop of whipped cream, vanilla sauce, or a scoop of vanilla ice cream.
