  • 1 cup, halved cherry tomatoes
  • 2 cups baby spinach
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon black pepper
  • 1 zested and juiced lemon

Directions

Step 1

Rinse the green lentils thoroughly under cold running water and set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat.
