Ingredients

  • 2 medium Cucumber
  • 3 medium Tomatoes
  • 1 large Red bell pepper
  • 1 small Red onion
  • 0.5 cup Kalamata olives
  • 0.25 cup Fresh parsley
  • 0.5 cup Feta-style cheese (SCD-compliant)
  • 0.25 cup Extra virgin olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 1 clove Garlic (minced)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash and dry all fresh vegetables.

Step 2

Peel the cucumbers if desired, then slice them into half-moons about 1/4 inch thick.

Dice the tomatoes into bite-sized pieces.

Remove the seeds from the red bell pepper and cut it into thin strips.
