  • 1 large head Cauliflower
  • 1 medium Onion

  • 2 stalks Celery stalks

  • 2 tbsp Olive oil
  • 2 tbsp Tomato paste (SCD-legal)
  • 1 cup Chicken or beef broth (SCD-legal)
  • 2 tbsp Fresh parsley
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Ghee or butter (SCD-legal)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Separate the cauliflower into florets and steam them until they are fork-tender, about 12-15 minutes.

Step 3

While the cauliflower is steaming, finely dice the onion, carrots, and celery, and mince the garlic.

Step 4

In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for an additional minute.

Step 5

Add the ground beef or lamb to the skillet. Cook, breaking it up with a wooden spoon, until the meat is browned and no longer pink, about 5-7 minutes.

Stir in the tomato paste and cook for 1-2 minutes to enhance its flavor. Then add the chicken or beef broth, salt, and black pepper. Simmer the mixture for 10 minutes until slightly thickened. Stir in fresh parsley and set aside.
