  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 3 tablespoons Unsalted butter
  • 8 ounces Baby Bella mushrooms, sliced
  • 3 cloves Fresh garlic, minced
  • 2 cups Heavy cream
  • 1 cup Parmesan cheese, freshly grated
  • 12 ounces Fettuccine pasta
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt, black pepper, and garlic powder on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes on each side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside. Let it rest for 5 minutes, then slice into strips.

In the same skillet, add another tablespoon of olive oil and 2 tablespoons of butter. Once melted, add the sliced mushrooms and sauté for 6-7 minutes until golden and tender. Add the minced garlic and cook for an additional 1 minute until fragrant. Remove the mushrooms from the skillet and set aside.

Meanwhile, cook the fettuccine pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Add the sautéed mushrooms back into the skillet with the Alfredo sauce. Stir to combine. Add the cooked fettuccine pasta to the skillet, tossing to coat the pasta in the sauce. If the sauce is too thick, add reserved pasta water a couple of tablespoons at a time until the desired consistency is reached.

Step 7

Top the pasta with the sliced chicken. Sprinkle with fresh parsley for garnish and serve immediately.
