Ingredients

  • 300 grams egg noodles
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 200 ml heavy cream
  • 2 teaspoons Dijon mustard
  • 1 teaspoon whole-grain mustard
  • 1 tablespoon lemon juice
  • 3 tablespoons dill, freshly chopped
  • 150 grams smoked salmon, flaked
  • 1 tablespoon capers, drained
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper, freshly ground

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Step 2

In a large skillet, melt the butter over medium heat. Add the finely chopped onion and sauté for 4-5 minutes until softened and translucent.

Step 3

Lower the heat slightly. Stir in the heavy cream, Dijon mustard, whole-grain mustard, and lemon juice. Cook for 2-3 minutes, stirring occasionally, until the mixture is warmed through and slightly thickened.

Step 4

Add the chopped dill to the sauce, reserving a small amount for garnish. Stir well to combine.

Step 5

Gently fold in the flaked smoked salmon and capers. Cook for 1-2 minutes, just until the salmon is warmed through.

Step 6

Add the cooked noodles to the skillet and toss to coat them evenly in the creamy sauce. Season with salt and freshly ground black pepper to taste.

Step 7

Remove the skillet from the heat. Garnish with the remaining dill, and serve immediately. Enjoy your Scandinavian Noodles hot!
