Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 0.5 cup white wine (dry)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.5 teaspoons red pepper flakes
  • 2 tablespoons parsley (fresh, chopped)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 pieces lemon wedges (for serving)

Directions

Step 1

Pat the shrimp dry with paper towels and season with salt and black pepper. Set aside.

Step 2

In a large skillet over medium heat, melt 2 tablespoons of butter with the olive oil.

Step 3

Add the minced garlic to the skillet and sauté for 30 seconds to 1 minute, or until fragrant, being careful not to let it burn.

Step 4

Increase the heat to medium-high and add the shrimp to the skillet in a single layer. Cook for 1-2 minutes on each side, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Step 5

Deglaze the skillet by pouring in the white wine, scraping up any browned bits from the bottom of the pan. Let the wine simmer for 2-3 minutes to reduce slightly.

Step 6

Lower the heat to medium and stir in the lemon juice, red pepper flakes, and the remaining 2 tablespoons of butter. Allow the butter to melt and the sauce to thicken slightly.

Step 7

Return the cooked shrimp to the skillet and toss to coat them in the sauce. Cook for 1-2 minutes to warm through.

Step 8

Remove the skillet from heat and sprinkle the chopped parsley over the shrimp.

Step 9

Serve immediately, garnished with lemon wedges. Enjoy your Scampi Sauté with crusty bread, pasta, or rice.
