Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 0.25 cup dry white wine
  • 4 cups baby spinach, chopped
  • 0.5 cup heavy cream
  • 4 ounces cream cheese, softened
  • 0.5 cup grated Parmesan cheese
  • 0.33 cup breadcrumbs
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a large skillet, melt 2 tablespoons of unsalted butter over medium heat.

Step 3

Add the minced garlic and sauté until fragrant, about 1 minute.

Step 4

Stir in the white wine and allow it to reduce slightly, about 2–3 minutes.

Step 5

Add the shrimp and cook for 1–2 minutes per side, until pink and just cooked through. Remove the shrimp with a slotted spoon and set aside.

Step 6

To the same skillet, add the chopped spinach and cook until wilted, about 2–3 minutes.

Step 7

Reduce the heat to low and stir in the heavy cream, softened cream cheese, and grated Parmesan. Stir until smooth and creamy.

Step 8

Return the cooked shrimp to the skillet, stirring gently to coat in the sauce. Add lemon juice, salt, and black pepper. Remove from heat.

Step 9

Transfer the shrimp and sauce mixture to a greased 9x9-inch baking dish.

Step 10

In a small bowl, mix the breadcrumbs with the remaining 4 tablespoons of melted butter and olive oil.

Step 11

Sprinkle the breadcrumb mixture evenly over the shrimp and sauce.

Step 12

Bake in the preheated oven for 12–15 minutes, or until the topping is golden brown and crispy.

Step 13

Remove from the oven and let cool for 5 minutes. Garnish with freshly chopped parsley before serving.
