Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp olive oil
  • 4 garlic cloves, minced

  • 0.5 cup feta cheese, crumbled
  • 0.25 cup kalamata olives, pitted and sliced
  • 1 tbsp fresh oregano leaves, chopped
  • 2 tbsp fresh parsley, chopped
  • 0.25 tsp red pepper flakes
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 12 oz spaghetti or linguine (optional)

Directions

Step 1

If serving with pasta, bring a large pot of salted water to a boil. Cook spaghetti or linguine according to package instructions, then drain and set aside.

Step 2

Heat a large skillet over medium heat. Add olive oil and swirl to coat the pan.

Season the shrimp with 0.5 tsp salt and 0.25 tsp black pepper. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

In the same skillet, lower the heat to medium-low and add the minced garlic. Sauté for about 30 seconds or until fragrant, being careful not to burn.
