Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 4 slices prosciutto, thinly sliced
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 2 tbsp fresh lemon juice
  • 0.5 tsp red pepper flakes
  • 2 tbsp fresh parsley, finely chopped
  • 0.5 tsp sea salt
  • 0.25 tsp freshly ground black pepper
  • 0 cooked pasta or crusty bread (optional, for serving)

Directions

Step 1

Pat the shrimp dry with paper towels and season both sides with sea salt and freshly ground black pepper.

Step 2

Cut the prosciutto slices into thin strips and set aside.

Step 3

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 4

Add the shrimp to the skillet in a single layer and cook for 2-3 minutes on each side, or until they turn pink and are just cooked through. Remove the shrimp from the skillet and set aside.

Step 5

Lower the heat to medium and add the minced garlic to the skillet, stirring constantly for about 1 minute, until fragrant but not browned.

Step 6

Pour in the white wine and scrape any browned bits from the bottom of the skillet. Allow the wine to reduce by half, about 2-3 minutes.

Step 7

Stir in the lemon juice, red pepper flakes, and the remaining 2 tablespoons of butter. Let the butter melt completely and create a smooth sauce.

Step 8

Add the prosciutto strips to the skillet and sauté for 1-2 minutes until slightly crisp but still tender.

Step 9

Return the cooked shrimp to the skillet and toss to coat them in the sauce. Warm through for about 1 minute.

Step 10

Sprinkle the dish with fresh parsley and adjust seasoning with additional salt and pepper if needed.

Step 11

Serve immediately over cooked pasta or with crusty bread to soak up the buttery sauce.
