Ingredients

  • 12 pieces Scallops (large, fresh or thawed)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 piece Garlic (whole bulb)
  • 1 cup Heavy cream
  • 0.25 cup Chicken broth (optional for thinning sauce)
  • 1 tablespoon Lemon juice (freshly squeezed)
  • 1 tablespoon Fresh parsley (chopped, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Slice the top off the garlic bulb to expose the cloves. Drizzle with 1 teaspoon of olive oil, wrap in foil, and roast in the oven for 25-30 minutes or until soft and golden.

While the garlic roasts, pat the scallops dry with paper towels and season both sides with salt and pepper.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
