  • 1 pound Fresh sea scallops
  • 3 tablespoons Unsalted butter

  • 1/3 cup Dry white wine
  • 1/2 cup Heavy cream
  • 1 tablespoon Lemon juice
  • 2 tablespoons Fresh parsley, chopped

  • 1/4 teaspoon Black pepper

Directions

Step 1

Pat the scallops dry with paper towels to remove any excess moisture. This helps them sear properly.

Step 2

Season the scallops with salt and pepper on both sides.

Step 3

Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter to the pan.

Once the butter is melted and the pan is hot, place the scallops in a single layer in the skillet. Sear for 2-3 minutes on one side until they develop a golden-brown crust. Flip and cook for another 2 minutes on the other side. Remove the scallops from the pan and set aside.
