Directions

Step 1

Pat the scallops dry with paper towels to ensure a good sear. Season both sides with salt and black pepper.

Peel the fresh pineapple and remove the core. Cut the pineapple into small, bite-sized cubes and set aside.

Finely chop the garlic cloves and roughly chop the fresh cilantro. Zest and juice the lime, keeping both separately.
