Ingredients

  • 12 pieces Sea scallops
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 6 tablespoons Unsalted butter
  • 2 cloves Garlic (minced)
  • 3 tablespoons Fresh coriander (finely chopped)
  • 2 tablespoons Lemon juice
  • 0.25 cup Heavy cream
  • 0.25 cup White wine

Directions

Step 1

Pat the scallops dry with a paper towel and season both sides with salt and black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil.

Step 3

Once the oil is hot, add the scallops to the skillet in a single layer, ensuring they do not touch each other. Cook for 2-3 minutes per side, or until they develop a golden-brown crust. Remove the scallops from the skillet and set aside, keeping them warm.

Step 4

Reduce the heat to medium and add the butter to the same skillet. Allow the butter to melt and turn slightly golden but not burnt.

Step 5

Add the minced garlic to the butter and sauté for 30 seconds until fragrant.

Step 6

Pour in the white wine and allow it to reduce by half, about 2-3 minutes.

Step 7

Stir in the heavy cream, lemon juice, and chopped coriander. Simmer the sauce for another 2 minutes until slightly thickened.

Step 8

Taste the sauce and adjust seasoning with more salt or lemon juice if needed.

Step 9

Return the scallops to the skillet, coating them with the coriander butter sauce. Cook for 1 minute to warm them through.

Step 10

Plate the scallops with a drizzle of the coriander butter sauce and garnish with extra fresh coriander, if desired. Serve immediately.
