Ingredients

  • 1 pound large sea scallops
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 28 ounces crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes
  • 0.25 cup fresh basil leaves, chopped
  • 12 ounces spinach linguine
  • 0.25 cup grated Parmesan cheese, for serving

Directions

Step 1

Pat the scallops dry with paper towels and season both sides with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat.

Step 3

Sear the scallops for 2-3 minutes on each side until golden brown and just cooked through. Remove them from the skillet and set aside.

In the same skillet, lower the heat to medium and add the remaining olive oil and butter.

Add the minced garlic and sauté for 30 seconds until fragrant, being careful not to burn it.
