  • 2 Garlic cloves, minced
  • 0.5 cup Dry white wine
  • 0.25 cup Heavy cream
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Lemon zest

Directions

Step 1

Pat the scallops dry with paper towels, removing as much moisture as possible to ensure a good sear. Season both sides of the scallops with salt and black pepper.

Step 2

Lightly dust the scallops with the flour, shaking off any excess.

Step 3

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat until the mixture is hot and shimmering.

Place the scallops in the skillet in a single layer, making sure not to overcrowd the pan. Sear the scallops for 2-3 minutes on each side, or until they develop a golden-brown crust and are opaque in the center. Remove the scallops from the skillet and set them aside on a plate.
