  • 12 pieces Sea scallops
  • 1 cup Shiitake mushrooms, sliced
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 2 cloves Garlic, minced
  • 0.333 cup Dry white wine
  • 0.333 cup Chicken or vegetable broth
  • 1 tablespoon Fresh parsley, chopped
  • 1 teaspoon Lemon juice
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Pat the sea scallops dry with paper towels and season both sides with salt and black pepper.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 3

Add the scallops to the skillet in a single layer, ensuring they do not touch each other. Sear for 2-3 minutes on each side until a golden-brown crust forms. Remove the scallops from the skillet and set them aside on a plate.

Step 4

In the same skillet, add the remaining tablespoon of olive oil and sauté the sliced shiitake mushrooms for 3-4 minutes until softened.
