Directions

Step 1

Pat the scallops dry with paper towels and season both sides with a pinch of salt and black pepper. Set aside.

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once the butter has melted and is slightly sizzling, add the scallops in a single layer without overcrowding the pan.
