Ingredients

  • 1 pound sea scallops
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 1 cup dry white wine
  • 0.5 cup heavy cream
  • 2 teaspoons Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Pat the sea scallops dry with paper towels and season them with a pinch of salt and pepper.

Step 2

Heat 1 tablespoon of butter and the olive oil in a large skillet over medium-high heat.

Step 3

Once the butter is melted and starts to foam, add the scallops in a single layer. Cook them undisturbed for 2-3 minutes on one side until a golden crust forms, then flip and cook for another 2 minutes. Remove the scallops from the skillet and set them aside.

Step 4

Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet. Stir in the minced garlic and sauté for about 30 seconds until fragrant.

Step 5

Deglaze the skillet with the white wine, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce by half.

Step 6

Stir in the heavy cream, Dijon mustard, and lemon juice. Simmer the sauce for another 2-3 minutes until slightly thickened.

Step 7

Return the scallops to the skillet, spooning the sauce over them. Cook for 1-2 minutes, just until heated through and coated with the sauce.

Remove the skillet from the heat and sprinkle the dish with chopped parsley.
