Ingredients

  • 12 pieces sea scallops
  • 1 cup cremini or button mushrooms
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 0.25 cup dry white wine
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Pat the sea scallops dry with a paper towel and season both sides with salt and pepper.

Step 2

Clean and slice the mushrooms into thin, even pieces.

Step 3

Mince the garlic and chop the parsley finely.

Step 4

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

When the pan is hot, add the scallops in a single layer, making sure they do not touch. Sear for 2-3 minutes on each side until golden brown. Remove the scallops from the pan and set them aside.
