Ingredients

  • 1 pound scallops
  • 1 pound asparagus
  • 2 tablespoons vegetable oil
  • 3 cloves garlic
  • 1 tablespoon ginger
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions

Directions

Step 1

Rinse the scallops under cold water and pat them dry with paper towels. If they have a tough side muscle, remove it.

Step 2

Trim the asparagus by snapping off the woody ends. Cut the asparagus into 2-inch pieces.

Step 3

Mince the garlic and ginger. Thinly slice the green onions and separate the white and green parts.

Step 4

In a small bowl, mix together the soy sauce, oyster sauce, sesame oil, cornstarch, and water to make the stir fry sauce. Set aside.

Step 5

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Season the scallops with salt and black pepper, then sear them in a single layer for 2 minutes on each side until golden brown. Remove from the pan and set aside.

Step 6

Add the remaining tablespoon of vegetable oil to the pan. Stir fry the garlic, ginger, and the white parts of the green onions for 30 seconds until fragrant.

Step 7

Add the asparagus to the pan and stir fry for 3-4 minutes until crisp-tender.

Return the scallops to the pan and pour in the prepared stir fry sauce. Toss everything together and cook for another 1-2 minutes until the sauce thickens and coats the ingredients evenly.

Garnish with the green parts of the green onions and serve hot over steamed rice or noodles.
